Objective of blanching process is to inactivate or retard bacterial and enzyme action, which could otherwise cause rapid degeneration of quality. Blanching is carried out by exposing the entire product to high temperature for very short period of time directly to fruits and vegetables. Traditional blanching method were done by the means of steam or hot water, Steam blanching usually take longer time , water blanching is faster as compared to steam however it results in great loss in terms of nutrients of food.
